Cranachan Pancakes
Find that there’s neither enough alcohol nor Scottish-ness involved in celebrating pancake day? Me neither; cue Cranachan (pronounced Kran-e-ken in your best Scottish accent), it’s a pairing of the classic Scottish dessert of whipped cream, oats, raspberry, honey and whiskey with a light lemon pancake. now that’s a breakfast of champions! (or for the more faint of heart it’s a great post-dinner dessert on Pancake Day…)

Ingredients
For the Pancakes
Eggs - 2
Flour - 100g
Semi-Skimmed Milk - 100ml
Baking Powder - 1tsp
(Optional) Lemons - 2
For the Cranachan
Whiskey - 1 tbsp
Oats - 1 tbsp
Honey - 1 tbsp
Double Cream - 150ml
Raspberries - 150g
Method
Cranachan Pancakes Step One - Toasty Oats
Place the oats in a frying pan on a low heat an toast gently, stirring occasionally. You’re only very lightly toasting them, waiting for a nutty smell to come off the oats, not for them to change colour (if they brown they’re overcooked).
Once you start to get the nutty smell, take off the heat an pour into a bowl for later.
Cranachan Pancakes Step Two - Raspberry Coulis
Place about half of the raspberries in a pan (you’ll need the other half fresh raspberries to top at the end), add a few drops of water and heat on low with a lid on the pan until the raspberries have broken down, this should take a few minutes.
Pour the raspberries into a bowl and set aside for later.
Cranachan Pancakes Step THree - Cranachan Cream
Add to a mixing bowl the double cream, honey, and whiskey. Using a electric whisk, whisk on low speed until you get stiff peaks (should take a few minutes).
Gently fold in most of the toasted oats (save a few to decorate at the end).
Set aside for later.
Cranachan Pancakes Step Four - Battery
Using a fine grater, grate the zest of the lemons (try and avoid grating too much of the white pith under the zest, it’s bitter).
Add the zest, flour, and baking powder into a mixing bowl. Add the eggs and whisk until combined.
Whilst shill whisking add the milk in 3 stages, until combined. Set aside for 5 mins for the baking powder to start working.
Cranachan Pancakes Step Five - Flipping Pancakes
Heat a frying pan with a little oil or butter on low heat.
Cook the pancakes in batches of 3-4 flipping half way through cooking.
Once cooked, place on a plate and cover with a clean tea towel to help keep the heat in.
Cranachan Pancakes Step Six - Cranachan Pancakes
Stack the pancake and top with the raspberry coulis, fresh raspberries, the cranachan cream, the remaining toasted oats, and a little honey.
