Fish Finger Flatbread Recipe

This Fish Finger Flatbread recipe is incredibly simple to make, looks really impressive, and tastes absolutely amazing! It’s the perfect lunch for a Summer’s day, and will have your guests reaching for more.

Ingredients

  • Fish fingers - 8 to 10

For the Flatbread

  • Flour - 150g

  • Natural Yogurt - 150g

  • Baking powder - 1 tsp

For the Tartar Sauce

  • Mayonnaise - 2 tbsp

  • Lemon Juice - 0.5 lemons

  • Capers - 5 to 10

  • Mini Gherkins (or Cornichons) - 4 to 5

  • Mustard - 1 tsp

To Serve

  • Parsley

  • Lemon Juice

  • Capers

  • Mini Gherkins (or Cornichons)

  • Salt and pepper

Method

Fish Finger Flatbread Step One - Dough

Preheat the oven to 180°C (356°F) - or as your fish finger packet advises.

In a bowl mix together the flour, yogurt, and baking powder.

Set this aside for 10 to 15 minutes to rest (and let the baking powder get to work).

Place your fish fingers in the oven, as they can cook whilst the dough’s resting.

 

Fish Finger Flatbread Step Two - Tartar

Whilst the dough’s resting and fish finger’s cooking, time to make the tartar sauce.

Finely slice the mini gherkins (or cornichons).

In a bowl then combine the mini gherkins (or cornichons), capers, lemon juice, mayonnaise, mustard, plus a little pepper.

Place the sauce in the fridge until you need it.

 

Fish Finger Flatbread STEP Three - Flatbread

As the fish fingers are about 10 minutes from being ready, divide the dough into two (or more if you’re making more than 2 flatbreads).

On a floured surface gently press the dough into a circle (big enough to cover the base of your largest frying pan). Tip; keep the dough lightly floured as you’re working it, as it can be sticky!

Then heat up your frying pan on a medium-high heat (you can use oil in the pan or not - depends how healthy you’re feeling…)

Gently place the flatbread in the pan and cook for 2 to 3 minutes each side - until it looks nice and golden brown (you can keep checking it whilst it’s cooking).

Once cooked, place on a board and cover with a clean tea towel whilst you repeat the process for the other flatbread.

Once they’re cooked, remove the fish fingers

Top the flatbreads with some of the tartar sauce, the fish fingers, some; gherkins, capers, chopped parsley and then a squeeze of lemon juice and a few more drops of tartar sauce.
