Roast Potatoes Recipe
In search of the perfect roast potato recipe? Look no further! This recipe is super easy and creates crispy on the outside, fluffy on the inside potatoes every time.

Ingredients
Potatoes - 1kg
Stock Cube (Chicken or Vegetable) - 2
Garlic - 4 cloves
Thyme - 4 to 5 sprigs
Olive Oil - 50ml
Salt and Pepper
Method
Roast Potatoes Step One - Boiling Spuds
Peel and chop the potatoes.
Place in a pan of water with the stock cubes and bring to the boil.
Boil until the potatoes are cooked through; this part’s essential to the potato’s fluffiness - you need to be daring enough to leave the potatoes in there until they completely cooked i.e. you could mash them if you wanted to, but before they start to disintegrate.
Push the cooking of them as far as you dare.
Roast Potatoes Step Two - Steaming
Once the potatoes are cooked, very gently transfer them to a sieve or colander (if the potatoes are really soft, use a spoon rather than pouring them out). Leave the pan out, you’ll need it again shortly.
Leave the potatoes in the sieve for 5 minutes for the water to evaporate.
Pre-heat the oven to 180°C / 356°F.
Roast Potatoes STEP Three - Baking Time
Thinly slice the garlic.
Transfer the potatoes gently back to the pan and add the garlic, thyme, a large sprinkle of salt and pepper, and about 80% of the oil.
Gently stir all the ingredients together to coat the potatoes.
Pour all the ingredients out onto a baking tray lined with grease proof paper, and pour over the remaining oil.
Place the potatoes in the oven for about an hour, turning only once or twice during the cooking period.
Roast Potatoes STEP Four - Roast Potatoes
Once the potatoes are golden and crispy, remove from the oven and serve straight away.
