Sausage & Egg McMuffin Recipe
Best breakfast ever! And you don’t even need to leave the comfort of your own home. This double sausage and egg McMuffin recipe (with hash brown side) is the perfect weekend indulgence.

Ingredients
Sausage & Egg McMuffin
Sausages - 6 (or 3 if you want single sausage and egg McMuffins)
Eggs - 2
English muffins - 2
Cheese Slices (mild cheddar) - 2
Butter - 1 tbps
Salt & Pepper
Hash Brown
Potatoes - 2 large
Eggs - 1
Salt & Pepper
Specialist Equipment
Egg ring (can be made out of kitchen foil if needed)
Method
Step One - Potatoes
Peel and grate the potatoes. Place the grated potatoes in the centre of a clean tea towel, gather up the corners into a bundle and twist it tight over the sink to wring out as much water from the potatoes as possible.
Return the grated potato to a bowl and mix through an egg and a sprinkle of salt and pepper.
Leave in the bowl for later.
Step Two - Sausage Patties
Slice down the middle of the sausages and remove the meat from the skins. Take the meat of one and a half sausages, roll into a ball, and flatten into a meat patty (make sure they’re slightly wider than the muffin as they’ll shrink when they cook).
Keep doing this to make the other patties.
STEP Three - Hash Browns
Preheat the oven to 180°C fan (355°F) and preheat a foil-lined tray in the oven.
Place a little oil and butter in a frying pan over a medium heat.
Divide the potato mixture into 2 and on a chopping board, shape into hash brown shapes.
Gently transfer to the frying pan, and brown for 2-3 minutes on either side.
Gently transfer the hash browns to the tray and return to the oven to bake for 25 minutes.
Continue to the next step, as you’ll only have around 5 minutes before the sausage patties also need to go into the oven.
STEP Four - Sausage Burgers
Whilst the hash browns are baking, add the sausage patties to the frying pan on a medium heat. Brown for 2-3 minutes on each side.
Add to the tray with the hash browns and return to the oven for around 20 minutes.
STEP Five - Poached Eggs
With about 10 minutes to go until the sausages / hash browns are done it’s time to do the eggs.
If you don’t have egg rings, make them by folding a few layers of foil around the bottom of a can of food.
Lightly oil the foil rings and place them in a frying pan. Pour a little water in the bottom of the pan (just enough to cover the base) and bring to the boil.
Once boiling, pour the eggs into the rings, cover the pan and cook for 2-3 minutes.
STEP SIX - Sausage & Egg McMuffin
Toast and butter the muffins, then remove all the ingredients from the heat and put together the McMuffins in this order:
Muffin bottom
Cheese slice
Sausage patties
Poached egg
Muffin top
Serve with the hash brown on the side.
