Sourdough Starter Pancakes Recipe
Think it’s a waste throwing away leftover sourdough starter each time you refresh it? Like pancakes? I have the recipe for you! This pancake recipe can be made in the morning or the night before, uses your starter to make incredible pancakes, and make you feel great for recycling (the great feeling could just be the syrup actually…). You’ll love this recipe!

Ingredients
Flour - 100g
Baking Powder - 1 tsp
Baking Soda - 0.5 tsp
Salt - a pinch
Sourdough Starter - 125g
Milk - 125g
Maple Syrup - 1 tbsp (or 1.5 tbsp sugar)
Egg - 1
Butter - 2 tbsp (plus some to cook in)
Toppings (berries, whipped cream, etc)
Method
SourDough Pancakes Step One - Base Mixes
In a bowl combine the sourdough starer, milk, maple syrup, and the egg.
SourDough Pancakes Step Two - Batter
Melt the butter in a pan.
Fold the flour and the melted butter into the milk - egg mix until fully incorporated.
[If making the night before, then seal and place in the fridge over night. Then 30 minutes before cooking stir in the baking powder, baking soda, and salt and allow to sit at room temperature]
If making it on the day then also stir into the mix the baking powder, baking soda, and salt and allow to rest for 30 minutes.
SourDough Pancakes Step THree - Now we’re Cooking
Heat a pan with a little butter over a medium heat. Pour in a ladle-full of the batter and cook the pancake until goldern brown on both sides (turn just once during cooking). If your pan’s big enough (and you’re daring enough) to cook 2 pancakes at once then definitely do that!
Set the cooked pancake(s) aside and cover with foil and a clean tea towel to keep warm whilst you cook the other pancakes.
SourDough Pancakes Step Four - Sourdough Pancakes
My personal preference is to serve the pancakes in a massive sharing tower topped with fruit, some jam or syrup, and maybe if you’re feeling extra indulgent some whipped double cream… Then let people remove the pancakes from the tower.
