Recipes on this website are often quite elaborate, this recipe is the exception. The reason that it’s made it on here is that I have it for my breakfast most mornings. It takes about 60 seconds to prep, goes in the oven for 25 minutes, and what comes out is a stunning collaboration of eggs, natural yoghurt, a little heat from hot sauce , and a beautiful touch of feta to finish it off. It bubbles up whilst cooking into a mini-volcano with hot sauce lava, and is only about 250 calories for two of them. You can see for yourself the reason it’s made it in here, it’s the perfect everyday treat.

Volcanic Baked Eggs

Prep Time: 5 Mins

Cook Time: 25 Mins

Difficulty: Easy

Serves: 2 baked eggs


Ingredients

  • Eggs - 2

  • Authentic Greek Yoghurt - 2 tbsp (Fage’s Total 5% is great)

  • Feta - 20g

  • Hot Sauce - 2 tsp (Cholula’s “chipotle” version is great, really smoky)

  • (Optional) Sriracha - to top

Method

Pre-heat the oven to 200°C (220°C for non-fan ovens).

Place an egg in each ramekin (no need to butter / grease in advance).

In the ramekin, top each egg with 1 tbsp of Greek yoghurt, 10g of feta (coarsely sprinkled), and 1 tsp of hot sauce.

Place in the oven for 25 minutes.

Once browned on top and bubbling, remove the ramekins from the oven. Squeeze a little sriracha (or other hot sauce) on top like lava and serve straight away.
