Waldorf Salad Recipe
This quick and easy Waldorf Salad plays on the original recipe from a 1890s charity ball in New York. With a few extra frivolities like grapes and feta-toasted walnuts, it takes the original apple, celery, and mayonnaise recipe to a whole new level!

Ingredients
Apples - 3
Celery - 1 head / bunch
Grapes - 10 to 15
Walnuts - 50g
Feta - 25g
Mayonnaise - 3 tbsp
Mustard - 1 tbsp
Lemon Juice - 1 tbsp
Cider or White Wine Vinegar - 1 tsbp
Method
Waldorf Salad Step One - Mayonnaise
Mix together the mayonnaise, mustard, lemon juice, cider vinegar, and a little salt and pepper.
Waldorf Salad Step Two - Feta-Toasted Walnuts
In a non-stick frying pan, heat the walnuts and feta over a low-medium heat, until the cheese sticks to the walnuts and goes golden brown.
Waldorf Salad Step Three - Waldorf Mix
Using a mandolin or sharp knife thinly slice the apples and celery into matchsticks, stirring each batch into the mayonnaise as you go (it’ll keep the apples from discolouring).
Reserve a couple of complete slices of apple to serve.
Waldorf Salad Step Four - Waldorf Salad
To serve, place a circle of the Waldorf Salad mix in the middle of the place and top with a slice of apple. Scatter the grapes (halved) and walnuts over the plate and top with a little of the sauce left over from the Waldorf mix.
